I buy the rotiserrie chickens at Costco once or twice a month, and I love them. few months ago Real Simple magazine ran some recipe suggestions to use with the rotisserie chickens, but I tried one and found the flavor of the chicken too strong for their recipes, so I thought I would share my recipes for chicken.
Day 1: Roast chicken with sauteed peas and rice.
Heat chicken in oven with tent of foil to prevent burning. Prepare brown rice with 1 cube of chiken stock and sautee frozen peas in pan with 1T canola oil and 2T browned onions. For chicken dipping sauce, mix 2T mayo with 3 drops of seame oil, 1t. sun dried tomato flakes*, and a dash of powdered garlic. Serve sauce on side.
Day 2: Chicken enchiladas
Remove meat from carcass. (return carcass to refrigerator) In large pan heat onions and garlic in butter, with salt pepper and cumin. Mix 1T of flour into 1 cp of sour cream. When veggies are tender, mix sour cream mixture into veggies, stir and cook until smooth, add 2 cps chicken broth and green chilis, stir and cook until smooth, remove from heat, add 1 cup of grated jack cheese. Put half of sauce mixture in bowl with chicken. Roll into warmed torillas in baking dish, top with remaining sauce, bake for 35 minutes covered. Uncover, top with 1 additional cup of grated cheese and bake an additional 5 minutes, remove from oven, let set for 10 minutes. Serve with salad.
Day 3: Chicken tortilla soup
Put carcass and any drippings in large stock pot with 6 cups water, onion, carrots, celery, garlic, etc. Bring to boil, cover and simmer for 2 hours. Remove veggies and carcass, strain out bones. Any meat can be removed and returned to put along with carrots. Add 1 cup of frozen corn and 1 can of diced chili ready tomatoes, simmer 20 minutes, serve with tortillas cut in strips and baked until crispy.
3 meals for one chicken.

Best chicken broth EVER! But seriously, I have made both chicken stock in the slow cooker with one of these and then made tortilla soup. Good tip on baking the tortilla strips though...

I make my enchiladas with sour cream too! I find most people dont. Its so good that way! I actually made them today for a church function and everyone LOVED them. Yum! Im inspired to go 3 days on one chicken now:)
